Apple Cinnamon Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 3/4 cup lakanto sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted/cooking oil
  • 2 large eggs
  • 1 cup milk/heavy cream
  • 1 teaspoon vanilla extract
  • 1 and a 1/2 cups cubed apple dices (about 2 medium apples)
  • Optional: 1/2 cup chopped nuts or raisins

Instructions:

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners. Cook your diced apples in 1/2 teaspoon of cinnamon, 1/2 cup of heavy cream, and 1/2 cup of Lakanto Monkfruit Sweetener, then let cool before folding in.
  2. In a large bowl, whisk together flour, Lakanto Monkfruit Sweetener, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together melted butter or cooking oil, eggs, milk or heavy cream, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples and nuts or raisins, if using. Do not overmix your batter.
  5. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let the muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
