Cheese Muffin

Start your day with this healthy and nutritious snack
Ingredients:
- 300g of cream cheese, softened at room temperature
- ½ cup of Lakanto Classic Sweetener
- 2 eggs
- 1 tsp of vanilla extract
- 1 tsp of lemon juice
- 1 ½ of flour
Method:
- Beat cream cheese with a hand blender on low speed until it gets light and creamy texture. Add Lakanto Classic Sweetener little by little.
- Add eggs one by one.
- Add vanilla extra, lemon juice, flour and blend again until mixed thoroughly.
- Pour the mixture into the muffin pan and bake in a preheated oven at 160ºC for 15 minutes.
- Let it cool to serve. You could also keep it in a fridge for one day.
- Decorate with strawberry jam, red berries or chocolate.
