Cheese Muffin

Start your day with this healthy and nutritious snack

Ingredients:

  • 300g of cream cheese, softened at room temperature
  • ½ cup of Lakanto Classic Sweetener
  • 2 eggs
  • 1 tsp of vanilla extract
  • 1 tsp of lemon juice
  • 1 ½ of flour

Method:

  1. Beat cream cheese with a hand blender on low speed until it gets light and creamy texture. Add Lakanto Classic Sweetener little by little.
  2. Add eggs one by one.
  3. Add vanilla extra, lemon juice, flour and blend again until mixed thoroughly.
  4. Pour the mixture into the muffin pan and bake in a preheated oven at 160ºC for 15 minutes.
  5. Let it cool to serve. You could also keep it in a fridge for one day.
  6. Decorate with strawberry jam, red berries or chocolate.
