Melonpan Cookies

Ingredients

Makes: 10 cookies

  • 100 g unsalted butter (softened)
  • 75 g Lakanto Classic (plus extra for finishing)
  • 1 egg
  • A dash of vanilla extract or vanilla essence (locally available alternative to vanilla oil)
  • 60 g wheat fiber
  • 35 g almond flour (almond powder)
  • ½ tsp baking powder
  • 1 tbsp Lakanto Classic (for finishing dusting)

Method

Preparation
  1. Preheat oven to 170°C (340°F).
  2. Line a baking tray with parchment paper.
Dough
  1. In a bowl, soften the butter until creamy.
  2. Add Lakanto Classic in 2–3 batches, mixing well each time until light and fluffy.
  3. Add the egg in 2–3 portions, mixing thoroughly after each addition.
  4. Stir in vanilla.
  5. Add wheat fiber, almond flour, and baking powder. Mix until a soft dough forms.
