Sweet (Sugar-Free) Glazed Salmon

Ingredients

Serves: 3–4

  • 1.5 lb salmon (≈ 680 g), fresh or thawed
  • 2 tbsp olive oil ¼ cup Lakanto Golden (or Lakanto Brown if available; Golden is widely available in Kenya and works best)
  • ¼ cup soy sauce
  • 2 garlic cloves, minced
  • Juice of 1 lemon
  • 1 tsp salt ½ tsp black pepper
  • Optional garnish: lemon slices, chopped parsley

Method

Preparation

  1. Preheat oven to 180°C (adjusted slightly for better salmon texture retention).
  2. Line a baking tray with foil.
  3. Pat salmon dry and place on foil.
  4. Season with salt and pepper.
  5. Fold foil edges slightly upward to hold glaze.

Glaze

  1. In a bowl, whisk together: olive oil, Lakanto Golden, soy sauce, garlic, lemon juice, salt & pepper
  2. Pour glaze evenly over the salmon.

Baking

  1. Cover salmon with another layer of foil.
  2. Bake for 20–25 minutes, until salmon reaches ~63°C internally.

Caramelising

  1. Remove top foil and baste salmon with pan juices.
  2. Switch oven to broil and cook for 3–5 minutes until caramelised.
  3. Garnish with lemon and parsley if desired.
